Behind The Brandywine

Glennon Travis
General Manager
Travis has spent 20 years in the restaurant industry in the United States and abroad. While studying management at Tulane University, Travis worked in some of New Orleans’ leading restaurants. In 2017, he helped develop a luxury hotel and restaurant in the Catskill Mountains. He also led hospitality operations at Soho House New York and participated in house openings in the United States and Europe. Most recently, Travis lived and worked in the Hamptons, where he helped launch Christian’s by Wölffer Estate Vineyard, an upscale eatery.
Chris Unruh
Beverage Director
Chris, a native of Kennett Square, PA, boasts 35+ years of industry expertise. Raised by parents in the hospitality business, he honed the art of crafting memorable dining experiences at an young age. Noteworthy early career milestones include working with George Perrier of Le Bec Fin and at the renowned Park Avenue Café in NYC.
 
He played a pivotal role in launching The Farmers Daughter in Blue Bell, PA, and 1906 restaurant at Longwood Gardens. A career long thirst for knowledge helped to shape his comprehensive background that spans all facets of hospitality. Rising to sous chef at the Half Moon Saloon in Kennett Square, PA, before transitioning back to front-of-house operations.
 
Most recently, Chris significantly contributed to Bardea Food & Drink's multiple James Beard nominations. Beyond his culinary and service acumen, he's a graduate of The Wine School of Philadelphia, holding beginner and intermediate sommelier certification.
Kaila Brenchi
Pastry Chef
Growing up in Rehoboth Beach, Delaware, Kaila Brenchi watched her grandmother make cookies and cheesecakes, and later, she added decorative touches. After graduating from Cape Henlopen High School, where she studied art, she entered the Wilmington restaurant industry.
 
Brenchi started as a server but soon realized she could combine her love of art and desserts in the restaurant kitchen. She earned a degree from Delaware Technical Community College and took a field trip to Belgium and the Netherlands to explore Europe’s classic confections—and world-renowned museums.
 
Her experience in school and abroad underscored her love for approachable dishes with layered flavors and textures. An exceptional pastry chef does not rely on sugar alone to create the perfect end to a meal. Moreover, a pastry, cake or cookie must look as good as it tastes. 
 
Back in Delaware, Brenchi was the pastry chef at the acclaimed Pizza by Elizabeths in Greenville, Delaware, before joining the team at Snuff Mill Restaurant, Butchery & Wine Bar in Brandywine Hundred, where she works under Bill Irvin and Chef Robert Lhulier, who also studied art.
 
Now she handles the dessert program for Snuff Mill and The Brandywine, Snuff Mill’s sister restaurant. Both allow her to flex her pastry skills and imagination to produce seasonally inspired desserts with high-quality ingredients. 
Tom Edgerton
Chef de Cuisine
Tom was born and raised in Delaware and graduated from A. I. Dupont High School, in the heart of chateau country. A 15-year kitchen veteran, he credits his love of cooking to his mother and grandmothers who encouraged in the kitchen as well as the chefs who mentored him in his journey. 

Reservations

Reservations for our indoor dining room are highly recommended.  All reservations can be made online.  Online reservations are preferred.

We do not require or take reservations for our bar seating or outdoor seating, this seating is available on a first come, first serve basis only. We have 8 seats available at the bar.

The Brandywine reservations are made within a 2 month reservation window.  On the first of every month, reservations for the following month become available. We cannot book reservations beyond the months that are open. For example, on the morning of October 1st, reservations for the month of November will open.

Overview
Reserved dining times for each party size are as follows:
  • Parties of TWO, 1 hour and 45 minutes.
  • Parties of THREE & FOUR, 2 hours.
  • Parties of FIVE OR MORE, 2 hours and 30 minutes.
 
A 15 min grace period is alotted to your reservation time for your party to be complete.  
 
We require a credit card to finalize your reservation.  
 
Your reservation will not be complete until you submit payment through EatApp on the Save Your Seat plan.
 
Upon booking your reservation, you will receive a text and/or email with a request for payment.  You have 24 hours to provide payment information, otherwise your reservation will be cancelled.
  • If your reservation is beyond 7 days from the time of booking, your credit card will be charged for $25 per guest. When you arrive at your reservation, you will be refunded 100% of your deposit.  If you cancel, reschedule, do not show or are late for your reservation, a refund will not be issued.  
  • If your reservation is within 7 days from the time of your booking, a hold will be placed on your credit card for $25 per guest. If you arrive at your reservation, the hold will be released. If you cancel, reschedule, do not show or are late for your reservation, the cancellation fee of $25 per guest will be charged to your credit card on file.
 
When booking reservations, please include children & infants in the party size.  
 
We are unable to accommodate any increase in party size.
Group Dining
The largest party size is 8 guests.  We only have 1 table available to accomodate parties greater than 4.  Separate reservations may not be combined to create larger parties. When booking reservations, please include children & infants in the party size.

Cancelation Policy
ALL cancellations and reductions in party size made less than 24 hours in advance are subject to a $25 per person charge.  All reservation changes and cancellations can be managed on Eatapp.com.
 
Party reductions of 50% or more may result in a reservation forfeiture and cancellation fee.
